Grilled Peach Panzanella

There are few dishes as summery as a panzanella. Heirloom tomatoes, fragrant basil and, here, the honeyed sweetness of grilled peaches. This is by no means traditional. You would not find peaches or tahini in a Tuscan or Umbrian version, yet they do beautiful work, soaking up the dressing and the juices of summer's ripest fruit. The bread turns deep gold and crisp at the corners, then softens just enough where it meets the tomato. The grilled peach adds a warm, jammy contrast to the acidity of the tomatoes and the tang of the dressing. Olive oil and ripe tomatoes are a quiet anti inflammatory pairing, the lemon and tahini bring brightness and calcium, and the whole plate stays light and raw enough to suit your ovulatory phase, when fresh and vibrant feels right. It is a lunch to linger over, or a side that steals the table. Swap the tomato vinaigrette for balsamic and a teaspoon of dried oregano, and use gluten free bread if you need to.
